VEGAN MUFFINS:

INGREDIENTS:

2 cups wholemeal flour

2 tsp baking powder

3/4 cup sugar

1/2 cup blueberries ( fresh or frozen) or a ripe banana

1/3 cup oil

soy milk


PREPARATION:

Mix all dry ingredients, then add fruit, then oil and enough soy for a slightly runny mix.

Let it stand for 10 minutes. Some of the moisture will be soaked up.
divide in to a medium 12 muffin tin. You can add a teaspoon of jam in the middle if you want.

Cook on 180C oven for 20 minutes.
