VEGAN FRENCH TOAST:

INGREDIENTS:

Mix the following together with a whisk till smooth:

1 cup of soymilk or ricemilk (I used vanilla ricemilk)

2 tbls of nutritional yeast flakes (make sure it's Nutritional Yeast Flakes)

2 tablespoons of baking flour (not bread flour)

2 teaspoons natural sugar (turbinado or sugar in the raw)

1/2 teaspoon of salt


PREPARATION:

Makes about 8 slices (if you double this, don't double the salt [never double salt in recipes] - just make the salt 1 and 1/2 times, not 2 times)

Vegan bread (I get this kind called Pioneer bread) it's hearty with lots of nuts and things. The thicker, heavier the bread the better.

Dip the slices of bread one at a time in the mix till their soaked through but not too soggy. This is where a thick, hearty bread comes in handy. Many breads have eggs in them, so be on the look out.

Get a non-stick frying pan going with about an 1/16 of inch (about the size of 6-7 normal size business cards stacked up) of light olive oil or peanut oil going so it's nice and hot, but not too hot. Keep it at medium until you are ready with the bread. Then turn it up to medium high and fry up the bread until golden brown on both sides. Watch it carefully just as you would with regular french toast. Cover with syrup and transfat free dairy free margarine or nothing. It tastes like the real thing! Fantastic.
