A quick and delicious snack and you control the sugar!! Your kids will love it; makes a great grown-up, summertime snack too. Serves 2.
INGREDIENTS
1 large banana, cut in small chunks
1 large apple, peeled and finely chopped
2 teas. lemon juice
1/4 - 1/3 C. white berry sugar (superfine), to taste
8 oz. plain yogurt (commercial or even better, make your own (recipe also in the book)
Topping suggestions: chopped nuts, granola, raisins, coconut, sunflower seeds, carob or chocolate chips, a sprinkle of cinnamon etc. Choose your own favorites.
In a medium-sized bowl combine the fruits and lemon juice. Add sugar and yogurt and mix thoroughly to combine. Taste and add more sugar if desired, go easy though, should be slightly tart to taste. Spoon into 2 individual serving dishes, cover with plastic wrap and put in freezer. Allow to freeze 3-4 hours, just until firm. Remove from freezer and sprinkle with toppings of choice before serving.
