APPLE CINNAMON GRANOLA COOKIES

INGREDIENTS:

  • 12 oz. silken tofu
  • 1 cup xylitol
  • 1 tsp. vanilla
  • ½ cup molasses
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • 2 cups whole wheat pastry flour
  • ½ tsp. ground coriander
  • ½ tsp. cinnamon
  • ¼ tsp. ground ginger
  • ¼ tsp. allspice
  • 2 cups apple cinnamon granola, unsweetened
  • 1 cup raisins

    PREPARATION:

    Preheat oven to 375 degrees.

    Combine tofu and xylitol with a hand mixer until tofu is creamy.

    Add in vanilla, salt and molasses. Mix well; then add in baking soda and baking powder. Mix well.

    Add in flour one cup at a time and incorporate well. Add in spices; stir to combine. Add in granola and raisins. Stir just enough to combine.

    Spray a cookie sheet with olive oil, then drop dough by large spoonfuls about ½ inch apart.

    Bake for 15 minutes; remove from baking sheet immediately, and cool on wire rack
